Pork Tatemado
Slow-braised pure cider-ey goodness. Flavours of ginger, tomatillo, cinnamon, chillies.
Chicken Pibil
Marinated overnight in orange juice, achiote paste and garlic, then grilled to add a little smoky flavour and baked in banana leaves.
(V) Oaxacan Mole aka the Choc Norris
Sweet potatoes, corn, plantains, green beans, pumpkin seeds, red & green peppers, banana, raisins, almonds, loads of spices and chocolate.
